A quick side dish with ingredients you probably already have on hand. Carrots are easy to roast and make for a healthy side pairing. This recipe first made its Odds & Hens debut as backup singers to the fried oysters but today is their day.
Roasted Carrots with honey, garlic and cayenneIngredients:
- Honey
- Garlic
- Cayenne or other spicy pepper powder
- Salt and pepper
- Carrots
- Olive oil

Reduced balsamic (for drizzling at the end, if you like)
Instructions:

Clean, peel and chop the carrots

Toss the carrots with olive oil, honey, cayenne and garlic. It is quite easy to put in a clean plastic bag and then shake shake shake.

Place on a foil lined sheet, add salt and pepper. Roast at 375 for only about 15 minutes. But check them to see if they are done to your liking.
